1. Jaggery and Sesame Laddus

Ingredients

1.5 cups grated coconut, 3/4 cup jaggery, 1/4 tsp cardamom powder, ghee needed, 1/4 cup water, 2 tablespoons ground sesame seeds

Method

Add water to the jaggery and mix. Add ghee to a nonstick pan. Add coconut and fry it. Now add jaggery and sesame to the pan and mix while stirring.

Now put cardamom powder in it and turn off the gas. Serve the ladoo by applying a little ghee on the palm.

2. Coconut and Jaggery Kheer

Ingredients

1/4 cup rice, 100 grams finely chopped jaggery, 1/2 liter coconut milk, 1 teaspoon cardamom powder, 1/2 teaspoon cumin powder, 1 teaspoon dry ginger powder, 3 tablespoons fried coconut pieces, 1 tablespoon ghee, 2-4 cashews, 1 tsp gram lentils (add ghee on the griddle and fry the dal lightly)

Method

Soak the rice a little and put in a blender and grind coarsely.

After adding ghee to the saucepan and adding jaggery to it, cook it by adding coconut milk. Now add rice paste and cook for a while.

Add cardamom powder, cumin powder and dry ginger powder and let it cook until it thickens.

Serve kheer in coconut shell. Garnish with coconut pieces, cashews and gram lentils on top.

3. Sesame Crusted Tofu

Ingredients

150 grams tofu, 1 egg, 3 tablespoons bread crumbs, 1 tablespoon white sesame, 1 tablespoon black sesame, canola oil for frying, some spring onions, some lettuce

Method

Cut the tofu into thick slices.

Spread both types of sesame seeds in a plate. Spread bread crums on another plate. Put egg in a bowl.

Add oil to the pan and heat it. First coat each slice of tofu in the egg. Then fry the bread crumbs and later coat the sesame seeds.

Remove the fried slices of tofu onto absorbent paper.

First spread the lettuce in the plate and arrange the tofu slices on top.

Serve them hot with tomato ketchup or green chutney.

4. Sesame coated flour

Ingredients

200 grams boiled and mashed kabli chana, 2 tablespoons garlic paste, 1 teaspoon ginger paste, 1 teaspoon cumin powder, 1 teaspoon coriander powder, salt, a pinch of garam masala, 1 cup finely chopped spring onion, 6 tablespoons finely chopped coriander leaves, 2 Tablespoon flour, 1 tsp baking powder

Method

Put all the ingredients in a big bowl and mix.

Use this mixer to make the desired shapes.

Spread sesame on a plate and coat each tikki in sesame seeds.

Add sunflower oil to the pan. Now put three tikkis in it and fry till it becomes golden from both the sides. Remove these tikkis on top of lettuce.

Serve hot with mayonnaise or hung curd.

5. Molasses and Sesame Candy

Ingredients

1 cup grated coconut, 1/4 cup roasted sesame, 1/4 cup roasted peanuts, 250 grams jaggery, 1 tsp cardamom powder, ghee as needed

Method

Put melted ghee in a plate and keep it aside.

Melt jaggery in nonstick saucepan and turn off the gas.

Now add grated coconut, peanuts and cardamom powder.

Put the desired shape shape in this mixture.

Now place these candies on a greased plate to set.

Keep them in the container only after they have cooled down completely.
